An excellent project to do with a spare Linux computer is to make it into your internet gateway (basically it will replace your router). You will need 2 network cards in it and a hub or switch. I had a couple good references for this, none of which I can find now but this one looks pretty good:
http://newbiedoc.sourceforge.net/networking/homegateway.html
Mine which I installed about 2 years ago runs Red Hat 7.3 in text mode (you will learn the important stuff much better without a GUI to hold your hand). From here you will set it up as a DHCP server to assign IP addresses to machines on your local network and as a firewall. Other cool stuff to set up is Samba (Windows file and print server) and FTP. This stuff will give you the most of the skills needed to be the IT department of a small company.

I've been reading up on alot of linux so far and I can't make up my mind of which version to use. I've come to the conclusion of either Debian or Red Hat! Which version would you recommend for a real New Person to Linux?

re:
i would go with red hat between those 2.
Linux ain't userfriendly though, aint no click follow directions and install is done. Was a bit tricky at first, so i recommend getting some sort of guide for the Os you go with or you will get sick of it fast.
What is a computer with out functions like flash/java/mp3-programs etc.
