What are units like daemon, skeleton, etc. and how they work?

What are buildings like runestone etc???

How can I use them all when creating a new map&

They are units that can be given to any player in a map you make. Demons and skeletons are both very weak though.

Runestones are simply a building that you can assign to any player in a map you make. They do nothing except give you vision where they are placed, and make another building that the enemy has to destroy.

All of this is done in your map editor.
